These lighter evenings have got us pining for the long summer nights that are just around the corner. It’s time to get back out in the garden and soak up the rays, so here’s a delicious recipe that will set you up for the first al fresco feast of spring.

A bowl of Greek goodness


You’ll need: pitta bread x 2, tomatoes x 2, ½ red onion, ½ cucumber, ½ lemon, 250g halloumi, 1 tbsp capers, houmous, natural yoghurt, olive oil.


Set the oven to 180˚c, cut up your pitta bread into little triangles and pop them in the oven for 5-10 minutes (until they’re nice and crisp). Then slice your halloumi and fry it until golden brown. Next, chop your tomatoes, red onion, cucumber and drizzle with olive oil and lemon juice. Finally, mix your houmous and natural yoghurt with a little more lemon juice and drizzle over your scrumptious salad – then serve it up in your shiny new Homesense crockery.
