Baking 2020

National Baking Week is here and we’re sooo up for it. Any excuse, eh?
But if lockdown banana bread was your first triumph and you’re keen to up the ante, this one is for you. We’ve put together a must-have-in-your-kit list for beginner bakers wanting to whisk up a showstopper, for a pinch of the price. 
With everyday essentials and fab finds, there won’t be a soggy bottom in sight!
For cakes & puds
1. Big name cake tin – because everything tastes better when it’s designer. 
2. Cooling rack – we know waiting is the hardest part, but it’s oh so worth it.
3. Rolling pin – knead we say more?  
4. Icing smoother – for perfectly smoothed icing at perfect prices.  
5. Measuring cups – one for you, two for me… but who’s counting?
6. Mixing bowls – that fancy French stoneware will do just the trick. 
7. Pastry brush – to spread the love for a scrummy steal. 
8. Sieve – to dust, shake, strain and sift to your heart’s content.
9. Piping bag – because you can’t be a pro baker without one. 
10. Whisk – at that price? You’ll take two!  
To make tasty toffee apple cake… 
You’ll need 
115g/4oz self-raising flour, plus extra for dusting
115g/4oz self-raising wholemeal flour
100g/3½oz soft dark brown sugar
1 tsp baking powder
2 tsp ground cinnamon
5 tbsp sunflower oil
5 tbsp milk
2 free-range eggs
2 eating apples, peeled, cored and chopped into 5mm/¼in cubes
50g/2oz toffee, broken into small pieces
Butter a heatproof bowl and dust with flour. Preheat the oven to 180C/350F/Gas 4. Mix the flours, sugar, baking powder and cinnamon together in a bowl ¬– you’ll find plenty in store. 
In a jug, beat together the oil, milk and eggs. Pour this onto the dry ingredients and stir to combine. Fold in the apple and toffee pieces. Licking the bowl not optional. Pour into the prepared dish and bake for 50-60 minutes. Test the cake is cooked through by inserting a skewer into the centre, if it is cooked it will come out clean. Leave in the dish to cool for 10 minutes, turn the cake out and then scoff the lot!"
